
Corn fritters are one of my favourite foods. I flipping love them. So fresh, and comforting! My neighbour Carol makes homemade sweet chilli sauce, and cream and her sauce… they’re a match made in foodie heaven.

When creating this recipe, I was meshing a few recipes together to try and make the perfect one. I didn’t want one that was too pancake-y, and I wanted it to pack a punch of flavour. The polenta adds a crunchiness to the outside that is perfection.


And then of course you drizzle with the sour cream and sweet chilli, and eat them up. This recipe makes about 12, and they’re awesome to eat hot… but also just as delicious to eat cold.

Cheesy Corn Fritters Recipe
Ingredients
2 cups of corn kernels, from fresh corn
1/4 cup polenta
1/3 cup plain flour
1 teaspoon paprika
1 egg
1/2 cup grated tasty cheese
1 spring onion, sliced finely
1 handful coriander, chopped
1 tablespoon fresh lime juice
Salt and pepper, to taste
2 tablespoons olive oil, for frying
Instructions
1. In a large bowl, place all of the ingredients except the oil. Stir to combine.
2. Place a large frying pan over medium heat, and place the olive oil in the pan.
3. Scoop 1/4 cup measuring cups of the mixture into the frying pan. I find it easier to scoop the mixture into my hands, mold a little, and then into the frying pan. Do what works for you. Wet hands work best.
4. Cook the fritters for 3 minutes each side, or until golden brown. Serve with sour cream and sweet chilli sauce.
