A party isn’t a party without someone showing off their favourite cob loaf recipe… and for me it’s this cheese & bacon version. With the crunchy bread pieces, crunchy vegetables and creamy filling, it’s an all-round winner and ultimate crowd-pleaser.
As I type this I have breadcrumbs on my keyboard, and a very happy tummy. One of the perks of being a food blogger is that you don’t need a party to make a cob loaf, you can just whip it anytime. I think my family quite likes me right now.
This cob loaf recipe is a real crowd-pleaser – it’s the perfect mix of gooey, creamy and scrumptious. I serve with veggies as well, because sometimes that crunch teamed with the creaminess is a winning combo!
How to make *my* cheese & bacon cob loaf recipe
STEP ONE: Preheat the oven to 180ºC and line a baking tray with baking paper. In a large frying pan over medium heat, add the oil and onion. Cook for 2-3 minutes, or until softened.
STEP TWO: Add the bacon to the pan and cook for a further 2-3 minute. Stir regularly to cook both sides of the bacon.
STEP THREE: Add the cream cheese, cream and sour cream to the pan. Mix to combine. Add in the grated cheese and chives. Stir to combine.
STEP FOUR: Cut the top off the cob loaf, and scoop out the inside, breaking into bite size chunks. Place on the baking tray along with the cob loaf. Break the lid of the cob into bite size pieces too, arrange around the cob loaf on the tray.
STEP FIVE: Pour the mixture into the cob loaf, and place into the oven. Bake for 20-25 minute or until golden.
STEP SIX: Serve warm with bread pieces, as well as vegetable sticks of your choosing.
Cheese & bacon cob loaf recipe
Ingredients
1 x cob loaf
1 tbsp olive oil
1 brown onion, finely chopped
250g streaky bacon, diced
250g block of cream cheese, brought to room temp
1/2 cup cream
3/4 cup sour cream
1 1/2 cups grated tasty cheese
2 tbs chives, chopped (plus extra for serving)

- Add the cream cheese, cream and sour cream. Stir to combine. Add in the grated cheese and chives. Stir to combine. Remove from heat.
- Cut the top off the cob loaf, and scoop out the inside, breaking into bite size chunks. Place on the baking tray along with the cob loaf. Break the lid of the cob into bite size pieces too, arrange around the cob loaf on the tray.
- Pour the mixture into the cob, and place into the oven. Bake for 20-25 minutes or until golden.
- Top with extra chives. Serve warm on a platter, along with carrot sticks, cucumber sticks and any other vegetables you like.
