1 x cob loaf
1 tbsp olive oil
1 brown onion, finely chopped
250g streaky bacon, diced
250g block of cream cheese, brought to room temp
1/2 cup cream
3/4 cup sour cream
1 1/2 cups grated tasty cheese
2 tbs chives, chopped (plus extra for serving)

Instructions
- Preheat the oven to 180ยบC, and line a baking tray with baking paper.
- In a large frying pan, place the oil and onion. Cook for 2-3 minutes, or until softened. Add the bacon, and cook for a further 2-3 minutes.
- Add the cream cheese, cream and sour cream. Stir to combine. Add in the grated cheese and chives. Stir to combine. Remove from heat.
- Cut the top off the cob loaf, and scoop out the inside, breaking into bite size chunks. Place on the baking tray along with the cob loaf. Break the lid of the cob into bite size pieces too, arrange around the cob loaf on the tray.
- Pour the mixture into the cob, and place into the oven. Bake for 20-25 minutes or until golden.
- Top with extra chives. Serve warm on a platter, along with carrot sticks, cucumber sticks and any other vegetables you like.
