This cauliflower soup is one of those recipes I come back to again and again. It’s simple, affordable, and made with ingredients I usually already have at home. No fancy steps, no hard-to-find ingredients… just a really good, creamy soup that feels like a warm hug in a bowl.
It’s also one of those dinners that works when life feels a bit chaotic. Chop a few things, let it bubble away, blend it up, and dinner is done.

👩🍳 Step-by-step instructions
- Soften the onion
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook, stirring occasionally, for about 7 minutes, until soft and fragrant. Add the chopped garlic and cook for another minute, just until it smells amazing (don’t let it burn!).

- Build the soup
Add the cauliflower, potatoes, chicken stock, dried thyme and garlic butter. Give everything a good stir and bring it to a gentle simmer.

- Let it cook
Let the soup simmer for 15–20 minutes, stirring occasionally, until the cauliflower and potatoes are very tender.

- Blend until smooth
Carefully transfer the soup to a blender in batches and blend until smooth and creamy. (Or use a stick blender if you have one — much easier!)

- Add the cream
Stir in the cream and gently reheat if needed. Taste and season with salt and black pepper.

- Serve and enjoy
Ladle into bowls and serve warm. Add your favourite toppings if you like (crusty bread is always a good idea).

Ingredients
- 1 tbsp extra-virgin olive oil
- 1 brown onion, chopped
- 1 tbsp garlic butter (or salted butter)
- 2 potatoes, peeled and chopped
- 1 clove garlic, finely chopped
- 1 large head cauliflower, cut into small florets
- 1L chicken stock
- 1 tsp dried thyme
- Salt and black pepper, to taste
- 150ml cream
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened (about 7 minutes).
- Add garlic and cook for 1 minute until fragrant.
- Add cauliflower, potatoes, chicken stock, thyme and garlic butter. Bring to a simmer.
- Cook for 15–20 minutes, until vegetables are very tender.
- Blend in batches until smooth.
- Stir in cream and reheat if needed. Season to taste.
- Serve warm.
