Breakfast recipe: Gluten-free & dairy-free banana bread

You’re either a breakfast person, or you’re not. I, surprise surprise, am. I’m also a morning person, I’m not sure if the two go hand in hand. My Ma would wake up early, and as a child as soon as I heard her stirring I was up too. She’d have one weetbix, one piece of toast and I’d sit near her with two weetbix and milk {hot water added during winter}.

Thirty-three years on breakfast is still my favourite meal of the day, and I’m not even sick of eating weetbix yet. It’s my dinner of choice when Hubby is on night shift.

My dad never ate breakfast. I remember him only eating it on Christmas Day. Hubby isn’t a big fan of breakfast either. I just don’t get it. Frustratingly, Lacey doesn’t follow after me either {Luella is a weetbix kid, thankfully}. Anyone else have to tell their kids to eat their breakfast only seventy billion times each morning? Ugh.

Breakfast is so important, and with 1 in 7 kids skipping breakfast at least once a week {and half of adults doing the same} it’s pretty worrying. A good brekky fuels you up and gets your raring to go for the day.

Coles is encouraging Aussies to get their breakfast on, and start your day the right way. They want families to take the 7-day challenge, and just eat breakfast every single day for one week {and hopefully create a habit that they won’t want to break}. It doesn’t have to be fancy, toast/weetbix/eggs will do. They’ve created a whole host of delicious recipes for breakfast for inspiration. There are recipes for kids breakfasts, as well as some that are healthy, quick and easy, cafe-style, classic and gluten-free. Below is the gluten-free {& dairy-free} banana bread I made over the weekend. It was a great treat for breakfast on the go.

Ingredients

2 medium ripe bananas, mashed
2 large eggs
3/4 cup coconut milk
1/4 cup vegetable oil
1 tsp vanilla extract
2 cups gluten-free plain flour
1 cup of lightly packed brown sugar
1 cup desiccated coconut
1/2 tsp salt
2 tsp gluten-free baking powder
1 tsp cinnamon

Method

♥ Preheat your oven to 180˚C {160˚C fan forced}. In a medium bowl combine bananas, eggs, coconut milk and oil together. Mix well. Combine dry ingredients together in a separate bowl.
♥ Stir wet ingredients into dry ingredients until combined. Pour into a greased and based lined small loaf pan {11cmx21cm}. Bake for 1 hour, or until cooked when tested with a skewer.

  1. I absolutely love making banana bread, as there always seem to be a few left over bananas in the house so it’s one of my go-to recipes. Great to now have a gluten free version. Looking forward to giving this a try. xxx

  2. I’m only a breakfast person when it’s holidays and I have all the time in the world. I struggle on working days as I don’t feel hungry when I get up, but I think this banana bread could tempt me otherwise! Looks delicious 🙂

  3. I love breakfast – it’s my favourite meal of the day. I love lazy breakfast at weekends and I always try to make time for breakfast on weekdays, even if it’s at my desk! This banana bread looks super yum and I love that it’s gluten free!

  4. I don’t care if my kids don’t eat their dinner (well I kind of do) but a proper breakfast is the order of the day at my house. I have 5 daughters and my staples are weetbix, baked beans, vegemite and ingredients for a smoothy! This banana bread should go down a treat. Thanks for sharing.
