Easy beef nachos

When it comes to easy, delicious dinners that the family will happily eat, you can’t beat beef nachos. This one-tray version means you can plonk it on the table for everyone to devour. Easy!

One of the easiest dinners to make for the family has to be beef nachos. This simple recipe is super budget-friendly, and filling as well, meaning everyone will leave the table satisfied. It has a mix of beef mince and refried beans, meaning you’re bulking out the protein but the kids won’t even notice!

Keeping the nachos meat mix the same, you can play around with alternatives. I love these salty tortilla chips for our family, but you could use some cheesy doritos for scooping if that was your preference.

While this is one of my favourite recipes that uses affordable beef mince, you might like to try some of my other favourites, including beef meatball stroganoff, beef & pork rissoles, or even smiley cottage pie.

How to make beef nachos

To make one large nachos, I line a baking tray with baking paper and pile on the corn chips, and top with grated cheese.

If you’d like to make individual beef nachos for each person, you can place the corn chips topped with cheese into small oven-proof bowls – keeping in mind the bowls might be too hot for little hands to handle.

Once the cheese has melted you can start topping with your favourite toppings, like sour cream, avocado, onion, tomato, coriander, and of course the beef and bean mix. If you have fussy kids, serve the toppings in individual bowls so they can create their own nachos bowl.

Ingredients

2 bags of tortilla chips

500g beef mince

1 packet Woolworths taco seasoning

1 x 435g tin refried beans

150g grated Mexican cheese

TOPPINGS

Sour cream

Avocado

Cherry Tomatoes

Coriander

Salsa


Instructions

1. Preheat oven to 200ºC. Line a baking tray with baking paper.

2. In a large frying pan, add the beef mince, and cooked until cook through. Drain any excess oil, and return to heat.

3. Add the taco seasoning and refried bean mix, and stir to combine.

4. Place the tortilla chips over the prepared baking tray, and move to distribute evenly. Sprinkle the grated cheese over the top. Pop into the oven and cook for 5-10 minutes, until the cheese is melted.

5. Top with mince mix, and other toppings and serve.
