If you’re looking for a little treat for yourself, or for the kids’ lunchboxes, this is a great one to try. Sophia from the Thermomix Baking Blogger has kindly shared this recipe with us from her new cookbook, Supercharged. It’s filled with loads of delicious and healthier recipes {sweet and savoury} that you can whip up in your Thermomix. You can grab a copy here.

They are made with delicious ingredients, totally gluten free and vegan. The best thing is, they only take 10 seconds to prepare. These little yummy treats make a perfect lunchbox snack for the kids, too.

80g gluten free oats + extra for sprinkling
1 tsp gluten free baking powder
1 pinch sea salt flakes
30g soft coconut oil
40g maple syrup (or agave nectar or rice malt syrup)
1 tsp vanilla extract
1 ripe banana, halved
20g dried cranberries (or raisins)

1. Preheat the oven to 180°C/160°C Fan/GasMark4. Line a large rectangular baking tray with grease-proof paper.
2. Place the oats, baking powder, sea salt flakes, coconut oil, maple syrup, vanilla extract, banana and cranberries in the mixing bowl. Combine 20 Sec. / Reverse Speed 4.
3. Spoon tablespoons of the mixture onto the tray, leaving plenty of space in between and flattening each cookie with the back of a spoon slightly. Sprinkle with some oats and bake in the oven for 15-20 minutes until golden brown. Store in a cookie jar for up to 2 weeks.

Enjoy! xx
