My favourite kind of cooking is anything that is easy. Forget fancy ingredients or a million steps, it’s not for me. This is especially true when it comes to dinner time. I could not be bothered. It’s my least favourite meal of the day, and I just want to get in, and get it over and done with. {I sound like a good time, don’t I!? Ha!}. I like baking and cooking for fun, but dinner every night gets to me.
This dish really satisfies because you can throw it together VERY quickly and get it done. Not to mention that gooey cheesy goodness on the top there. There is that.
Super Easy Baked Meatballs Recipe

Ingredients
1 kg beef mince
1 red onion, peeled and finely chopped
1 teaspoon dried Oregano
1 teaspoon dried thyme
Salt and pepper
1 tablespoon of olive oil
1 jar of passata
1 giant handful mozzarella
Instructions
- Preheat your oven to 180ºC. Place the mince, onion, oregano, thyme and salt and pepper into a bowl. Mix together with your hands. Once all the ingredients are well combined, roll the mix into generous sized meatballs.
- In a large frying pan over medium heat, place 1 tablespoon of olive oil, and brown the meatballs for three minutes until brown on the outside.
- Place into a baking dish and top with passata, and the mozarella.
- Bake for 30 minutes, or until your meatballs are cooked through and the cheese is gorgeously melted.
