It’s one of those magical recipes where you throw three simple ingredients into the slow cooker, walk away, and come back to tender, flavour-packed chicken that practically falls apart on its own.
This slow cooker Mexican chicken is perfect for busy weeknights, lazy Sundays, meal prep, or those afternoons when you realise at 3pm that you forgot to plan dinner. Tacos, burritos, nachos, rice bowls, wraps… it does it all.
And the best part? Just three ingredients.

Why you’ll love this slow cooker Mexican chicken
- Only 3 ingredients – no chopping, no fuss
- Minimal prep – takes less than 2 minutes to throw together
- Budget-friendly using pantry staples
- Perfect for meal prep and leftovers
- Freezer friendly
- Super versatile – use it in tacos, burritos, enchiladas, nachos or rice bowls
- Family friendly and easy to customise (mild or spicy)

Step-by-step instructions
- Add everything to the slow cooker
Place the chicken breasts in the bottom of your slow cooker.
Pour the jar of salsa over the top. Then fill the empty salsa jar halfway with water, pop the lid back on and give it a good shake to get every last bit of flavour out. Pour that into the slow cooker too.
Sprinkle over the taco seasoning and pop the lid on.
- Let it cook low and slow
Cook on high for 4 hours or low for 8 hours.
By the end of the cooking time, the chicken should be incredibly tender and easy to pull apart.
- Shred the chicken
Using two forks, gently shred the chicken directly in the slow cooker. It should fall apart easily. If you’re impatient like me, even a pair of tongs will do the job.
Stir the shredded chicken through the sauce so it soaks up all that flavour.
- Serve it your way
This slow cooker Mexican chicken is incredibly versatile. Try it:
In soft tacos with avocado and sour cream
In burritos or burrito bowls
Layered over nachos with cheese
In enchiladas
Over rice with fresh coriander and lime
In wraps for easy lunches
Leftovers keep well in the fridge for up to 3 days and are perfect for meal prep.
