I’ve been confessing my love of mushrooms of late. I think people either love mushrooms, or they don’t. There seems to be no inbetween. Can I get show of hands? Who loves them?
This recipe is A-MAH-ZING? I tell you – butter, garlic and mushrooms – it’s a match made in heaven. Great for breakfast, as a side for dinner, or whip them up {like I did} and eat them for lunch by yourself. No sharing required.
ROASTED MUSHROOMS WITH GARLIC BUTTER SAUCE
INGREDIENTS
500g small button mushrooms, cleaned
1 tablespoon of olive oil
100g salted butter
4 cloves garlic, chopped finely
4 sprigs of thyme
1/2 small lemon juiced
Salt and pepper to taste
METHOD
♥ Preheat the oven to 200ºC and line a baking tray with baking paper. Place the mushrooms onto the baking tray {cut any larger mushrooms into half}, drizzle with oil. Cook for 20 minutes until deliciously golden.
♥ In a saucepan over medium heat place the butter. Cook until it turns a golden brown colour. This happens quickly, so don’t leave it. Once the butter is brown, remove from heat. Add in the garlic, thyme, lemon and salt and pepper. The butter mixture might spit at you, so be careful.
♥ Once the mushrooms are cooked, take them out of the oven and place in your serving dish. Pour over the butter mixture and serve immediately.
