This is my go-to pikelet recipe, with just four ingredients, it’s easy to throw together, budget friendly, and a family favourite for us.

If there’s one recipe that screams comfort and childhood memories, it’s this one. These easy pikelets (this is my mum’s pikelet recipe) are the kind of thing you whip up on a lazy weekend, when you want something quick, fluffy, and totally delicious.
They’re perfect for lunchboxes, afternoon snacks, or for stacking high with butter and jam and enjoying straight from the pan (no judgement here). Whether you’re making them for the kids, or just because you deserve a treat — this simple recipe never lets you down.

🥞 How to make this easy pikelet recipe
- Mix it good
Grab a mixing bowl and pop in all your ingredients. Give it a good whisk until everything is smooth and lump-free — like a little pancake magic happening right before your eyes.
- Get the pan ready
Heat up a non-stick frying pan over medium heat. Add a smidge of butter and swirl it around so your pikelets don’t stick (and get a little buttery love).
- Get cooking
Spoon the batter into the pan — about ¾ of a ladle per pikelet is my go-to, but feel free to go mini or mega depending on your vibe.
- Watch for bubbles
Cook until little bubbles appear on the surface. That’s your cue to flip! Cook the other side for another minute or so, until golden and cooked through.
- Enjoy!
Serve warm with your favourite toppings — butter, jam, honey, or just straight from the pan if you can’t wait (we’ve all been there).

Ingredients
1 cup of self-raising flour
1 1/2 tablespoons sugar
3/4 cup milk
1 egg
Instructions
- Pop everything into a mixing bowl and whisk away until it’s nice and smooth — no lumps allowed!
- Heat up a non-stick pan over medium heat, then add a little butter and swirl it around like you’re on MasterChef.
- Spoon in the batter — I use about ¾ of a ladle per pikelet, but you do you! Go big, go mini, go wild.
- When little bubbles start popping on the top, it’s time to flip! Give it another minute on the other side until golden and fluffy.
- Serve warm with all your favourite toppings (or eat them straight from the pan, I won’t judge).
