Easy no-bake apricot balls (my go-to lunchbox snack)

These no-bake apricot balls are quick, healthy and delicious! Made with apricots, oat bran and coconut – perfect for lunchboxes or snacks.

Today I’m sharing a recipe that stars one of my absolute favourite foods: apricots. Oh how I love them. These no-bake apricot balls are so easy to make and even easier to devour. They’re naturally sweet, deliciously chewy, and perfect for lunchboxes, after-school snacks, or sneaky little treats just for you.

I make them in the Thermomix (hello, convenience!) but you can absolutely whip them up in a regular food processor too – whatever works for you. And yes, we’re literally on a roll. 😉

Apricot Balls

How to make my no-bake apricot balls

  1. Blitz the apricots

    Place 1 cup of chopped dried apricots into a blender or Thermomix. Blitz for 20 seconds until they start to break down.

  2. Add the dry ingredients

    Add 2 tablespoons boiling water, ½ cup oat bran, ½ cup desiccated coconut, and ¼ cup skim milk powder. Blend for another 20 seconds, or until fully combined.

  3. Roll into balls

    Take heaped teaspoons of the mixture and roll them into balls using your hands.

  4. Coat in coconut

    Roll each ball in the extra ½ cup of desiccated coconut until coated.

  5. Chill and store

    Place in an airtight container and pop them in the fridge to firm up. They’ll keep for up to a week – if they last that long!

Ingredients

1/2 cup oat bran
1/2 cup desiccated coconut
1/4 cup skim milk powder
1/2 cup desiccated coconut, extra for coating


Instructions

  1. Place the apricots into a blender and blitz for 20 seconds.
  2. Add the boiling water, oat bran, desiccated coconut and skim milk powder and blend for another 20 seconds, or until the mixture has all blended.
  3. Take heaped teaspoons of the mixture and roll into balls, and roll each in the extra coconut. Store in an airtight container in the fridge.


Apricot Balls: Thermomix Instructions

INGREDIENTS

150g chopped dried apricots
2 tablespoons boiling water
60g oat bran
40g desiccated coconut
25g skim milk powder
40g desiccated coconut, extra for coating

METHOD
1. Place the apricots into the bowl and mix on SPEED 6 for 10 seconds.
2. Add the boiling water, oat bran, dessicated coconut and skim milk powder and mix on SPEED 5 for 10 seconds.
3. Take heaped teaspoons of the mixture and roll into balls, and roll each in the extra coconut. Store in an airtight container in the fridge.
