This is a beautiful family favourite that my late mother-in-law used to bring out after a busy day together. Grandma’s Chicken Noodle Soup Recipe just hits the spot and brings back great memories for the whole family.
When you think of Grandma’s Chicken Noodle Soup, you probably think of a soup that’s been lovingly cooked over the stove for hours and hours. I’m sorry to disappoint you, this ain’t it. But what will delight you is that it’s quick to make, and still packs a flavour punch while feeling like a hug from Grandma.
It’s soul food. There’s something about slurping up the noodles, and that simple chicken broth flavour that make this a perfect, easy and also budget-friendly dinner idea for the whole family.
This recipe is special to us, because Shane’s mum used to make it for us when we’d visit. A few times a year we’d drive or fly up from Bondi to Byron Bay and stay for a few nights. We’d spend our days exploring and having fun together, and then we’d come home to the most delicious dinners… that I’ll always miss. Pam cooked with love.
She’d laugh that I even share this, because it’s wasn’t a recipe that she made to entertain or to treat us, it was saved for the days we were busiest and we just needed something to fill our tummies. It did the job, and it did it well.
To complete this simple dinner, I think it’s best paired with soft with bread with lashings of butter. There’s nothing better!

PrintGrandma’s chicken noodle soup recipe
Ingredients
1 cup cooked shredded chicken
1 litre of chicken stock
1 cup water
1 packet of 2 minute noodles, including flavouring
100g spaghetti, broken
1 stem of spring onion, finely sliced
Instructions
1. Place everything, excluding the spring onion, into a soup pot, and bring to the boil. Simmer for 30 minutes, or until pasta is cooked through.
2. Ladle into bowls to serve, and top with spring onion.
