When it comes to cooking meat, I have to admit I’m not that great at it. Except if it’s meatballs, I can rock a mean meatball. Hubby though, he rocks the meat thing. Always.

Last weekend Hubby and I decided to do a little cook up. We’ve been doing a lot of breakfasts for dinners, because life has been stressful and we stopped making an effort. So I bought some of the Coles RSPCA-approved pork to create a pulled pork meal. This one is easy because you throw it all in the slow cooker and let it do it’s thing. Hubby cooked this one the night before, so that it would be ready for Sunday lunch. Our slow cooker has a timer, so we let it cook for 10 hours overnight.

We had to try this recipe. We’d heard so many people rave about it, and seemed so ridiculous that we wanted to give it a go. We put our spin on it, because it’s what we do.

COCA COLA PULLED PORK

Ingredients

2kg Coles Forequarter Roast Pork {a little more or a little less won’t matter}
2 cloves garlic, chopped
1 onion, chopped finely
1/4 teaspoon cayenne pepper
1.25L of coca-cola
2 bottles of Heston’s Sweet & Sticky BBQ Sauce
Salt & Pepper to season

Method

♥ Place the pork into the slow cooker. If it has strings around it, remove them before placing in slow cooker.
♥ Combine the garlic, and onion and then spoon onto the top of the roast. Season with salt and pepper, generously.
♥ Combine the BBQ sauce, coke and cayenne pepper. Stir to combine. Pour into slow cooker {don’t pour onto the meat or you’ll wash off the onion mix!}.
♥ Put the lid on and cook for 8-10 hours. Once cooked, remove meat from pot and shred using two forks. Dispose of the liquid, except for two cups. Return the shredded meat and remaining juice the pot and keep warm.

For the coleslaw: Throw one of these packs into a bowl. In a separate small bowl combine 1 cup of mayo, a tablespoon of caster sugar, cracked pepper and 1 tablespoon of apple cider. Pour over the coleslaw and stir to coat. If I had pineapple, I would have thrown it into this coleslaw because it just makes sense.

We then roasted some spuds to make it all into one delicious meal. You can also use soft bread rolls, which is equally as scrumptious. To roast a whole spud, just brush it clean, cover in foil and place it in a moderate oven until tender.

The smell while this was cooking was amazing. The neighbours walked by with their dog and asked what we were cooking. They’re kinda health freaks, and when we told them we had cooked the pork with coke, they nearly died. The end result was delicious though, and I understand why so many people do it, as weird as it sounds! It’s definitely worth trying.

  2. I’d do a family roast with all the trimmings. I know it sounds boring, but in our family we celebrate all the wonderful happenings in our lives with a roast! I’d invite my brother as he has just gotten a promotion-doesn’t sound like much, but it’s a dream come true for us. For years he suffered with incredible anxiety and was unable to leave the house, so this is worth celebrating! I’d also invite my step mum as her birthday is coming up and she does so much for us, everyday. I’d fill in the gaps with the rest of the family, who make life worth celebrating! I got a good bunch 🙂

  3. I would do a big bake up! Cakes, slices, brownies, bliss balls, cookies!!!
    I would invite all my girlfriends over that I don’t get to catch up with as much as I would like! Life seems to get in the way sometimes! We just had a dear friend pass away from ovarian cancer at 41 and that has made us realise life is way too short, lets enjoy life and each others company, plus we all need to eat more cake!!!!!

  4. I would invite my friend who just had a baby and her family. Slow cooked morrocan spiced wild goat. Crispy herb veges, (crispy vege curls for the kids). Choc fondue with tasty fruit for dessert. And make plenty so they can take leftovers for next days lunch and dinner

  5. I’d make lamb shanks for my guests along with heaps of steamed veggies and mash (I’m veg go, but cook meat for my family). My family and friends come over each Sunday for dinner, it’s the best! Just sit back and relax with my fave people in the world!

  6. I’d invite my best friend and god children over who are about to move to the UK. We only see each other once a year as it is living on opposite sides of the country but soon we’ll be on opposite sides of the world so our visits will be a lot less.
    I’d create a range of delicious salads to go with a good old fashioned bbq – spring vegetable pasta salad, spinach and pumpkin with caramelised balsamic, creamy coleslaw, minted pineapple and watermelon salad and my famous baked potato salad. Throw some sausages, chicken kebabs and steaks on the bbq and get some fresh toasty rolls from the bakery!

  7. Braised pork scotch fillet served on a bed of mashed sweet potato and wilted spinach yum! An awesome winters meal. I would invite my grandma who has cooked so many awesome family meals for us. Love you Grandma!!!

  8. I’d cook a pork belly roast, with apple sauce, veges, roast spuds, the works! My guests would be all our great friends. Life gets busy and time gets away from us so a massive dinner party would be amazing!

  9. I’d buy chocolate and lollies and icecream etc and create the most amazing chocolate fondue spread for my sons birthday next week. I’d put a table outside, cover it with plastic and let the kids go crazy making up their over dipping combinations. They would get absolutely filthy but they would have so much fun. If the weather is warm they can finish off with iceblocks and super soakers. Then just as they reach the peek of their sugar high I’ll send them home 🙂 $250 should get me lots of chocolate 🙂 and napkins.. and wet wipes.. and umm a mop might be good too.

  11. I would make crispy skin barramundi over creamed lentils cooked with speck, soooooo yummy, a little unique and I would invite Harry Potter over to enjoy it with me because, let’s face it, he’s my fave person even if he isn’t real!

  15. I would be the same as Inca. Growing up, and now with my family, we celebrate important occasions with a good old roast. I would do a mix of roast lamb and lamb shanks (hubby’s favourite), complete with mint jelly, crispy roast potatoes, sweet potato and pumpkin, corn and peas. I’d follow it with the most decadent, chocolate dessert I could. I’d invite my neighbours who are a lot like surrogate grandparents for my 2 kids to thank them for all they do for us

  16. Always my husband’s slow roasted pork belly with crackle, star anise and chilli sticky sauce, duck fat potatoes and steamed veg. It’s our meal that friends ask him to cook for their birthdays. They invite themselves after demanding it. They also bring wine which avoids awkwardness at the aforementioned self inviting.
    Any person who arrives at our door with wine is welcome to join in the eating but 🙂

  20. I would like to try making pork belly cooked over onions and garlic with Apple compote. Broccoli and cauliflower bake with a simple traditional gravy. Invite all the family.   23. My parents, my partners parents. I’d probably cook a giant roast, or something really hearty in the slow cooker. We’re big on smaller meals in our house, so something big and able to be shared will be on the menu!

  24. I’d cook up a huge feast for my family and my friends and their families! All sorts of goodies! I used to love inviting people over for a meal but finances have meant I haven’t been able to for the longest time.

  25. I would smoke a big piece of brisket. Marinate it with a dry rub the night before then cook it low and slow. When its cooked paint a rich glaze over the top and serve it with buttered potatoes, baby carrots, beans with a herb gremolata and a beautiful homemade jus. For dessert id cook a caramel apple crumble with icecream.
    I would invite as many people as i can. (friends, family, neighbours) I love cooking for my friends and family and i love seeing people come together over food. I would lay it all out on a table and everyone gets what they want 🙂

  26. I’d cook a piece of Coles beef in slow cooker all day, pull it apart and serve it up on fresh bread rolls with homemade mushroom gravy for my husband and two year old girl and all our family and friends around a backyard fire!

  27. When I was a child, there were foods I wanted to try just because they had a freaky name. Growing up with an English father and Irish mother helped because the English love an eccentric name (Spotted Dick anyone?) One of them was Toad In The Hole and I love cooking this for my family.

    I loved the book The Wind in the Willows and I had always imagined that this dish was linked to Mr Toad from Toad Hall and that by eating it I’d be transported to Toad Hall to hang out with Mr Toad.

    The Toads are sausages and they poke out from pastry which is like a giant Yorkshire Pudding, the Hole. Today it is still a favourite of mine and one I have passed on to my Greek niece only we gave it a bit of a Mediterranean feel by adding basil, Italian sausages and baby vine ripened tomatoes. Traditionally it’s made using pork sausages and rosemary.

    My husband loves it and devours it each and every time I produce it. The session ends with him patting his stomach after seconds and I’m reminded that I am in the presence of my own lovable rogue, my very own Mr Toad.

  28. This sounds delightful. Thank you for sharing the recipes. One of the things I look forward to in the fall, once the weather cools off, is cooking in my kitchen again. We don’t have Coles here, but I’m sure I could find the ingredients in one of the grocery stores here 🙂

Im not the worlds greatest cook…i have a kitchen because it came with the house kinda gal hahaha What i would love most of all is to buy all the ingredients to make a healthy yummy meal to feed my whole crew. I have 3 sons one who is living with his fiancee and new bubba and well the other two are 17 and 20 and I never see them. A large family dinner with them all would be awesome, it wouldnt matter what we ate but there would have to be alot of it!

  30. I’d set up a long table in the garden, invite all our friends over and serve an abundant meal of spiced belly pork, loads of salads and a crisp berry pavlova for dessert. There would be lots of cool wine, interesting conversation, laughter and love. A perfect day.
    (I’ve just put the recipe above in my slow cooker to cook overnight for tomorrows dinner)

  31. As it is coming into the warmer weather I would love to arrange a big camp out for family and friends at any one of the fabulous camping locations we have available to us here in Australia. We’d make a seafood feast with family favourites of raw fish salad- from fish we’d hopefully have caught 😉 I’d also smoke some with our trusty Oz-Pig, a delicious batch of creamed abalone and oysters kilpatrick cooked over a scrumptious wood-fire. Friends and family would bring their signature salad and sweet dishes and it would all be enjoyed with million-dollar views that costed us next to nothing, great company and a abundance of fresh air! I am literally counting down the days till we can tee this off with everyone!!

  32. I’d make my dad beef burgers and chips, with a dessert of homemade ice cream and homemade cheesecake while we sat in front of the TV watching the footy – something we have done my whole life and is one of my favourite things to do:)

I love being able to fill the house with a delicious smell, and have dinner ready at exactly the time I need, but without any stove-top stirring! Life has been really busy and super challenging for me and several of my nearest and dearest recently (like all of 2015 – megaYay!) so I’d love to get my bake on and whip up of all my faves (think brownies, think cupcakes, think delicious little raw slices for the more health conscious) and invite my main girls around for an afternoon of spoiling and soul-filling, quality girly time. Fresh made pizza bases Cheesey sauce topped our slow cooked Mexican chicken mix of chicken breast, taco sauce, beans, carrot, corn and coriander, which I make in big batches and freeze. Topped with lots of Colby Melty cheese baked, then sprinkled with crushed corn chips and big dolops of sour cream and avocado it’s yummy! I’d invite my friends and their kids and make mojitos to match for the mummies!

  55. Oh gosh if I could invite anyone it would be Nigella Lawson & Jamie Oliver. They are both my cooking crushes!!! I’d probably steal Jamie’s recipe for killer jerk chicken with rice & beans, chopped salad & chargrilled corn and for dessert I’d make Nigella’s decadent brownies!!! Yum, I love experimenting in the kitchen with great ingredients!

  56. I would make a chicken and sweet potato curry with rice, naan bread and eggplant chutney, with a cool cucumber, tomato, coriander and yoghurt salad. Perfect meal to round off a cool winter. I would invite my mum, brother, 3 sisters and partners + kids.. We grew up eating Indian as our grandparents are Indian! I would make more than enough to freeze, because I’m due with my second baby in October, you never know when you’ll need a quick meal that hits the spot 😉

  57. I’m trying to kick my sugar addiction so I’d find something delicious in the “I Quit Sugar” bible full of delicious sounding nourishing things that I don’t usually have in my cupboard!
    I’d invite my friend Emily and her family as she’s also a new mum and quitting sugar – who doesn’t love not having to cook for yourself 🙂

  59. I’d invite my Father for dinner and bake my ever much begged for and THE BEST IN THE WORLD lasagne with hand cut seasoned fries and salad. I make sure to bake my lasagne enough to make the family miss it so that every time I do make it they remember how special it is =D

  62. I would make a pot of spaghetti sauce(sister’s recipe) and invite my four grandchildren over.
    Ranging in age from three and a half to eight,they are quite a handful but my ex teacher voice brings them into line ! Of course we would have icecream and topping and chocolate and I would send them home high on sugar……not my problem……ha.
    Oh,I would serve a salad with the pasta just so it sounds healthy…..and it is !!

  64. I’d make the fattest steaks the universe has to offer and cover them in a creamy mushroom sauce. Creamy garlic mashed tayto, those thin carrots and fresh green beans would be on the side (the steaks would almost fill the plate!)
    I’d invite Mum & Dad for dinner to enjoy the steak dinner of the century 🙂

I’d make a huge lasagna and sour dough garlic bread with steamed greens and a big basil, tomato, balsamic and boccocini salad for my husband, baby, mum, dad, 2 brothers and their wives, sister and her husband and the 5 nieces and nephews – nothing better than hanging and enjoying food with my huge family! Oh and add a flour less orange cake for dessert – yum!!

  66. I would go all out as a celebration of finally getting a job after looking for 9 months. Mustard crusted roast lamb with loads of roasted veggies and freshly baked bread, followed by a beautiful pavlova topped with raspberries and blueberries. This feast would be enjoyed by my three kids and I and we would all be so lovely and full afterwards!

  67. I’ve actually become a big fan of the Coles magazines and a few of the recipes have become weekly favourites. So I would re-create their pork sausages with roasted red cabbage and apples, topped with cider and mustard sauce. It is delicious. I am generally not a fan of pork, but I love this dish. Of course now I am going to have to try the Coca-cola pulled pork recipe too, because it sounds amazing!
