Chocolate Earthquake Cookies Recipe

I’m not going to tip-toe around this one. These cookies aren’t healthy for you, I’m not even going to try and pretend that they’re nutritious or organic or anything… but they’re yum… and a really delicious treat. They’re called earthquake because you make the dough, and then roll into icing sugar, and then bake… and they kinda explode. Hence, the earthquake. I made them with milk chocolate because it’s what the kids prefer, but they’re even more delicious with dark chocolate… it just seems to work.

Chocolate Earthquake Cookies Recipe

CHOCOLATE EARTHQUAKE COOKIES RECIPE

INGREDIENTS
120g butter
120g milk chocolate {or dark if that’s what you prefer}
4 eggs
2 cups of caster sugar
1 teaspoon of vanilla
2 cups of plain flour
2 teaspoon baking powder
A pinch of salt
1/2 cup icing sugar

Chocolate Earthquake Cookies Recipe

METHOD
♥ In a saucepan over medium heat, melt butter and chocolate until completely melted.
♥ In a large bowl, beat eggs, sugar and vanilla, until combined. Add the melted butter and chocolate, and beat for 30 seconds.
♥ Add in the flour, baking powder, and salt and beat until smooth.
♥ Place the bowl in the fridge and chill for a few hours, or overnight.
♥ Preheat the oven to 180ºC, and line a baking tray with baking paper.
♥ Place the icing sugar in bowl. Roll the cookie mix into balls {around a tablespoon each}, and then roll in the icing sugar {it’s messy, but deliciously so!}.
♥ Place onto the baking tray and bake for 15-18 minutes.

Allow the cookies to cool before eating, if you can, and then tuck in!
