Speedy Fried Rice

A friend told me that every family should have a list of 20 recipes they make often. The ones you put on rotation and don’t even have to think about making. She has hers in a spreadsheet {man, I hope her organisational skills are contagious, because I NEED what she’s got} and when she plans out her week she picks from that list. Once a week or fortnight she’ll making something new or different.

Today I bring you Speedy Fried Rice. Honestly, I’m eating this as I type {yep, I think a grain of rice slipped under the F key} and I’ve pretty much blown myself away. So much flavour, and I didn’t even crack a sweat while cooking. It’s officially going on my list of 20 dinners. It’s the only dinner I currently have on that list, but hey… it’s a start, right?

I’ve made this a few times and it’s so good and easy. Luella ate THREE bowls full. The kid can eat, and she ate this like it was going out of fashion.

I wanted to tell her, “Honey. Slow down. It’s ON THE LIST. You’re going to be eating it all the time until you’re 18!” But hey, she’d just laugh at me and keep shoveling that stuff in.

SPEEDY FRIED RICE

INGREDIENTS

1 1/2 tablespoon vegetable oil
3 eggs, lightly beaten
100g bacon, chopped
1 cup pumpkin, grated
1 cup frozen peas
1/2 cup snow peas, chopped
2 x 250 packets Jasmine Microwave Rice – you don’t need to cook it {or cold rice from the night before}
3 tablespoons soy sauce
2 tablespoons coriander, chopped
4 shallots, sliced {green parts only}

METHOD

♥ Heat 2 teaspoons of the oil in a wok or large deep frying pan over medium-high heat. Pour in egg and cook. Swirl the pan so the egg covers the base and cooks evenly. Roughly break up the egg into small bite-size pieces, or if you like… remove and slice with a knife.
♥ Heat the remaining oil in the wok. Cook the bacon for 4 minutes, or until it’s starting to colour. Add the pumpkin, snow peas and peas and stir-fry for 1 min.
♥ Open the rice packets and add the rice to wok and stir-fry for 1 min to separate grains. Add soy sauce and stir fry until heated through. Top with coriander and shallots. Serve straight away.

NOTE: If your kids don’t dig green things, leave the coriander and shallots off for them, and add them for the adults. Recipe adapted from this recipe on Taste.com.au.

  1. Love fried rice! I’ve been meaning to make some for a while and it’s so easy to do! Might try adding some pumpkin next time!

  2. Why have I never got into a friend rice habit, I know I’d like it and I bet the kids would too… right, will try! I do have a few recipes that are on high rotation (dhal, spag bol, meatballs, lasagna, chicken) but if only there was one meal that all six of us loved!

  3. Fried rice is one of my regular dishes, along with zucchini slice, spag bol, mock chow mein, and homemade pizzas. I’m SO BORED of cooking the same stuff but need easy and something that my children will eat. I need more ideas!

      • It’s a recipe my mother in law gave me.

        500g mince
        2 cloves of garlic
        2 tbs butter
        3 tbs uncooked rice
        3 stalks celery
        1/2 – 1 cup shredded cabbage
        3 cups water
        1 packet chicken noodle soup*
        2 tsp curry powder
        1/2 cup frozen beans

        Fry onion in butter. Brown mince. Add other ingredients and simmer gently for 30 mins, making sure rice is cooked properly. Serve with soy sauce.

        My alterations are that I add more curry powder for taste, more rice (I add an extra 3tbs), 1 tbs of Worcestershire sauce. Any veggies can be used, I use what I know my kids will eat. Broccoli, capsicum, carrot, mushrooms, whatever you have.

        Because my hubby is gluten intolerant, we don’t use chicken noodle soup, instead we substitute Massel chicken stock powder (one heaped teaspoon) and break up some rice noodles into the pan.

        My children love it so it’s a winner in my book!

  6. Oh, I saw the pic and thought it was my fried rice! Mine is even simpler though, just onion, ham, bacon, shallots and egg (and the rice and soy sauce, of course). I have to try the pumpkin, I LOVE pumpkin!
