A potato bake with no cheese just sounded like it was going to be disappointing. Surely cheese was doing all the heavy lifting in a good potato bake, right?

Wrong.

This French onion potato bake is creamy, comforting, ridiculously easy, and now firmly on high rotation in our house. Just three ingredients, no fuss, and everyone actually eats it.

Ingredients

  • 1.5kg potatoes, peeled and par-boiled
  • 600ml cream
  • 1 packet French Onion Soup Mix

How to make 3 ingredient potato bake

  1. Preheat the oven

    Preheat your oven to 180ºC.

  2. Prepare the potatoes

    Peel and par-boil the potatoes until tender but not falling apart. Drain well.

  3. Assemble the bake

    Place the potatoes into a baking dish.
    In a jug, mix the cream and French onion soup mix, then pour evenly over the potatoes.

  4. Bake

    Bake for 30–35 minutes, until bubbling and lightly golden on top.

  5. Serve

    Serve hot as a side dish alongside your favourite mains.

1.5kg potatoes, peeled and par-boiled

600ml cream

1 packet French Onion Soup Mix


Instructions

  1. Preheat oven to 180ºC.
  2. Place par-boiled potatoes in a baking dish.
  3. Mix cream and soup mix, pour over potatoes.
  4. Bake for 30–35 minutes until golden and bubbling.

Notes

You can add cheese if you like, but you don’t need to.

Assemble ahead of time and bake when needed.

Works beautifully with roast chicken, lamb, sausages, or BBQ meats.
