Last year I brought you the best guacamole ever. It was simple and delicious… but it appears my taste-buds have somewhat matured in the past 12 months and I’ve encountered a new best ever. It packs a punch with flavour, and it’s just moorish. I promise. I put it out on the table when we had friends around recently and it looked like just some normal guacamole… and then they tasted it. “This is good!” they muttered with their mouths full, and I didn’t even prompt them.
Lacey’s favourite food is avocado so I made her a little one on the side, sans tomato and chilli, and with any food she always asks what it does to her body. Sometimes I make it up, and I kinda did this time too, “It’s really good for your skin. Avocado is just one of those really good foods.”
A quick Google later, and I wasn’t far off the mark… it’s filled with vitamin C and E, is good for your eyes, filled with anti-oxidants. It’s just good. Eat it already.
We have ours with the Organic cheese corn chips from the health food aisle at Woolies. They’re a match made in heaven. And yes, I’m wearing a halo as I type this. Avocado and Organic chips. Ha. Seriously, they just taste good {and they don’t stain your fingers that weird orange colour}.
Ingredients
1 small red onion, finely diced
1 tsp sea salt
1 chilli {optional}, finely chopped
Juice of 1 lime
2 ripe avocadoes, diced
1 punnet of juicy cherry tomatoes, diced
Fresh coriander, chopped
Method
♥ Place all the ingredients into a bowl and serve/eat/enjoy!

I love avocado, on toast, on a burger, in guacamole, or just dipped out of the skin with salt!
that’s how I make my guacamole and I can eat a whole bowl to myself! Yummo!
Add a pinch of ground cumin and ground coriander, and only use ripe or slightly overripe Hass avocados. The brownish bits actually make it taste better, and it will still turn out green in colour if fully mashed.
I’m making this right now to go with our homemade fish and chips, just thought I’d check your recipe, it’s basically the same as mine, except I have no idea of measurements, probably very like yours. Yummo!

Love it smashed with fetta and a squeeze of lemon juice (which also stops it going brown) on corn fritters (side of relish)….or smashed with ricotta and pepper on toast with a poached egg đŸ™‚
Try vegemite, avocado and poached eggs on toast. Sounds disgusting but it is sooo good, especially if you are feeling a little seedy from the night before!
