I remember, as a kid, that there used to be a chicken stuffed with broccoli that we’d have as kids. While I don’t know if that chicken still exists, I do know that this is a delicious take on this filling and works beautifully on stuffed potatoes.
Ingredients
1 broccoli head, cut into small florets and steamed until bright green
4 large potatoes
2 tbsp butter
2 tbsp plain flour
1 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
1 1/2 cup grated cheese
Instructions
1. Wash the potatoes, wrap in foil and cook in the slow cooker (on high for 4 hours). Alternatively cook in an air-fryer or oven.
2. In a medium sauce pan over medium heat, melt the butter. Add in garlic and onion powder, and stir. Add in the flour and stir for 2 minutes.
3. Add in the milk, and continually whisk until smooth, and mixture is boiling. Reduce the heat and add in the cheese and broccoli. Mix to combine.
4. Cut open each potato and smother with the cheesy broccoli mixture. Serve immediately.
