- 130g {1 cup} white plain flour
- 130g {1 cup} wholemeal plain flour
- 3 teaspoons baking powder
- 2 tablespoons raw sugar
- 230g {1 cup} milk
- 1 egg
- 125g butter, melted
- 150g {1 cup} dried fruit
Instructions
- Preheat your oven to 200°C.
- Prepare your cupcake tin by lining with cupcake papers {around 12}.
- Place milk and fruit into Thermomix. Blend on Speed 8, for 10 seconds. You want them to be chopped thoroughly.
- Add the egg and butter. Blend on Speed 6, for 5 seconds.
- Add dry ingredients and pulse blend until just combined.
- Fill the cupcake liners until 3/4 full. Bake for 20-25 minutes, or until golden and cooked through.
Notes
- If you’re not using a Thermomix, just chop the dried fruit roughly and blend with the butter, milk and egg. Place in a bowl, and mix with the dry ingredients and bake as above.
