Did you know I love cake? I do. Did you know that my kids don’t? I know, it’s some kind of modern tragedy. They happily sing happy birthday, and then reject the cake when it gets passed around at birthday parties. Don’t they know who their mum is?
They do love biscuits and cookies though {much to many Aussie’s dismay, my kids say cookies, and also candy… I don’t know why, I might blame movies and YouTube}. Lulu’s favourite thing to do is to make cookies with me. It’s a regular thing.
So, today I wanted to share with you a little hack to making super quick cookies that are bloody delicious. They will make the best Christmas gifts if you want to wrap them up and give them to people you love. Even some Christmas sprinkles tossed over them before baking would look amazing.
I grab these cake mixes from Woolies and keep them in the cupboard, for emergency cookie {and cake} situations. They only cost 75c, and they taste good. There’s a vanilla mix too, but these are my faves.
And then all you have to do is add 125g of melted butter {or if you want to make it even cheaper use 1/2 cup vegetable oil} and 1 egg. That’s it. Mix it together, roll into balls and pop into the oven at 180ºC for 8-10 minutes. If you are impatient and add your butter while it’s hot and just melted, you might need to pop the mix into the fridge for 15 minute to cool, so it’s easier to roll the balls.
And that’s it. You’ve got yourself some deliciously cheap and easy cookies. I mean biscuits. Whatever you call them, you’ll love them!

Ingredients
1 Woolies Cake Mix
1 egg
125g butter melted
Instructions
1. Preheat your oven to 180ºC and line a tray with baking paper.
2. Place all of the ingredients into a bowl, and mix until combined.
3. Roll into balls {around 1 tablespoon of mixture in each}, and place on to the tray. Bake for 8-10 minutes.
4. Enjoy!
