Simple Muesli Slice

Ingredients

1/2 cup rolled oats
1/2 cup self-raising flour
1/2 cup desiccated coconut
1/4 cup brown sugar, firmly packed
1/2 cup diced dried fruit {I love sultanas and apricots, you can choose what you like best}
100g butter
1 tablespoon golden syrup
1 tablespoon water
1/2 teaspoon bicarb soda


Instructions

1. Preheat the oven to 180ºC. Line a slice tray {I used a loaf tin, but a 20cm x 25cm slice tin is ideal} with baking paper.
2. Place all of the dry ingredients, excluding the bicarb soda, into a large bowl. Mix to combine. Add in the dried fruit and mix.
3. In a small saucepan, place the butter, golden syrup and water. Cook on medium heat until the butter is melted. Once melted, remove from the heat and add in the bicarb soda. The mix will foam up, this is completely normal. Add to the dry mix and mix to combine.
4. Scrape the mixture into the prepared slice tin, and spread to evenly distribute the mixture into the tin. Press down with the back of a spoon to set.
5. Cook for 20 minutes, or until golden brown on top. Remove from oven and let cool for 15 minutes in the tin, and then remove from tin and slice.
