It doesn’t look like anything too exciting, does it? Oh, but it was. It was a flavour-sensation. And it was easy to make, and everyone gobbled it up. You can’t ask for much more for a mid-week meal. Keep this one up your sleeve when you you can’t be bothered cooking, but you want something that tastes better than peanut butter on toast.
Ingredients
1 cooked chicken {meat removed and shredded}
1 avocado, peeled and sliced
1 small red onion, sliced thinly
1 large tomato, sliced {or a handful of cherry tomatoes chopped}
200g low-fat grated tasty cheese
1/2 cup chopped coriander
Salt & pepper
12 soft flour tortillas
Oil spray
Dip
1 cup low-fat sour cream
1 garlic clove, crushed
1 tbsp chives, chopped
Method
♥ Place the chicken, avocado, onion, tomato, cheese, coriander and seasoning into a bowl. Mix to combine.
♥ Heat frying pan to medium heat. Make one tortilla at a time. Place one tortilla on the bench, spread chicken mixture over each, and top with another tortilla. Spray oil into the frying pan, and place tortilla in the pan. Cook for 3 minutes each side. You’ll want to cook the tortillas more than I did. I made one after this that was much crunchier and it rocked.
♥ Make the dip by combining all the ingredients into a small bowl. Serve with slices of the tortillas.
I love making quesadillas for the kids! Fast, delicious and I have been know to add all sorts of veggies lurking in the back of my fridge!
We make fajitas quite often, as it’s a “sure meal” for hubby’s daughter also. Our favourite mid-week meal currently must be a pasta with tomato sauce and Finnish raw pork sausage (similar to German Sausischen). We always have left over tomato sauce when making pizza over the weekend, so it’s the perfect meal to use the rest of the sauce, the sausage is another children’s favourite as it’s tasty but still quite mild flavoured, and it’s as fast to make as cooking the pasta! I always add a bit of garlic and onion for flavor, and top it with shredded cheese (also often left over from making pizza). Obviously, this means we also eat a lot of home made pizza during the weekends! 😉
