Healthy Sweet Potato & Tuna Croquettes Recipe

So being diagnosed with gallstones has been fun {ha, not quite} but in all honesty, it’s been interesting. I’ve had to switch things up a little in order to not have any attacks. I wasn’t having them often anyway, and my diet was pretty good, but anything rich or fatty is definitely out. Right now I’m having fun searching for new foods to create, but I’m sure there will come a tantrum BECAUSE I JUST WANT TO EAT ICE CREAM.

I love croquettes, but don’t love that they’re cooked in oil. Sob. So I found a recipe by Louise Fulton Keats that looked like it would hit the spot. As always I tweaked it to suit myself and what I had in the pantry and they worked out beautifully. Louise makes pesto to serve hers with, but I went with a squeeze of lemon. Hubby had a little Kewpie mayonnaise. Perfection.

Healthy Sweet Potato and Tuna Croquettes

Ingredients
500g sweet potato, peeled and chopped
2 garlic cloves, peeled
185g can tuna in springwater, drained
1/3 cup finely grated parmesan {just put it in the blender and blitz}
2 tbs plain flour
100g panko bread crumbs
1 egg
1 tablespoon milk

Method
♥ Place the sweet potato and garlic in a saucepan. Cover with water and bring to the boil. Cook for 15 minutes or until the sweet potato is tender. Drain and then return to the saucepan. Mash and leave to cool.
♥ In a bowl, combine the tuna, parmesan, and sweet potato mixture. Season with salt and pepper. Shape the mixture {around 2 tablespoons} into little logs {around 7cm in length}.
♥ Place the flour and breadcrumbs in two separate bowls. Whisk the egg and milk together in a third bowl. Roll the croquettes in the flour, and then into the egg mix, and then into the breadcrumbs. Place on a baking tray.
♥ Place in the fridge to set for an hour.
♥ Preheat your oven you 200ºC, and spray the croquettes with oil. Bake for 40 minutes or until crisp. Serve with a squeeze of lemon and some mayonnaise or aioli {or eat plain!}.

    • I don’t have an air-fryer, so I’m not sure how they work… but because all the ingredients are already cooked, I reckon you should give it a try! x
