Ah, it’s so nice to be back on land. We had such a beautiful time on the cruise last week… but now I’m smack-bang in Christmas-mode. Is this happening at your place too?
My beautiful friend Sam, from The Annoyed Thyroid, has made me the most delicious looking brownies, rocky road style. I only wish they were physically sitting in front of me so I could munch away. Pop over and visit Sam at her blog, and try her delicious recipes. The girl can cook!
Festive Rocky Road Brownies
Makes 20 small squares
Ingredients
100g butter, roughly chopped
200g dark eating chocolate, roughly chopped
1 cup (220g) brown sugar
2 eggs
1/2 cup (75g) plain flour
1/3 cup (80g) sour cream
50g mini marshmallows
30g red and green M&Ms
35g pistachios roughly chopped
60g raspberry jellies, roughly chopped
300g white eating chocolate, melted
How to – Traditional
♥ Preheat oven to 180C/160C fan-forced. Grease and line a 19cm x 30 cm lamington pan with baking paper, extending the paper about 5cm over the long sides.
♥ Melt chocolate and butter in a medium saucepan over a low heat until smooth. Remove from heat and cool for about 10 minutes.
♥ Stir in the sugar and eggs into the chocolate mixture. Then stir in the flour and the sour cream.
♥ Spread the mixture into the pan and bake for about 30 minutes. Allow to cool in the tin.
♥ Combine marshmallows, nuts and candy in a bowl and sprinkle all over the brownie. Drizzle with melted white chocolate and refrigerate until set.
How to // Thermomix
♥ Preheat oven to 180C/160C fan-forced. Grease and line a 19cm x 30 cm lamington pan with baking paper, extending the paper about 5cm over the long sides.
♥ Break chocolate into pieces and add to the TM bowl. Chop on Turbo 2 or 3 times. Add the butter and melt for 1 minute 30 seconds at 70C on speed 3. Scrape down base and sides. Repeat. Allow to cool for about 10 minutes.
♥ Add the sugar and eggs and mix for 5 seconds on speed 5.
♥ Add the flour and sour cream and mix for 5 seconds on reverse speed 5. Repeat and check flour and sour cream is mixed through.
♥ Spread the mixture into the pan and bake for about 30 minutes. Allow to cool in the tin.
♥ Combine marshmallows, nuts and candy in a bowl and sprinkle all over the brownie. Drizzle with melted white chocolate and refrigerate until set.
