Easy, peasy fried rice: The $4 dinner you’ll be putting on high rotation

Ingredients

1 rasher bacon, chopped

2 eggs

2 cloves garlic, crushed

1 small knob of ginger, grated

1 carrot, peeled and diced

1/2 green capsicum, diced

1 cup frozen peas

1 spring onion, chopped

3 cups Woolworths Long Grain Rice, cooked and cooled

3 tbsp of soy sauce

1 tbsp sesame oil


Instructions

1. Prep all the ingredients before you start cooking. In a large frying pan over medium heat, cook the bacon. Once browned and cooked though, remove from the pan and put aside.

2. Place 1/3 of the oil into the frying pan. Beat the eggs into a bowl, and pour into the frying pan. Leave to cook for one minute, flip over and cook the other side for 30 seconds. Put aside, and once cool, chop into small pieces.

3. Place the remaining oil into the frying pan, put in the carrot and capsicum. Cook for 1 minute. Add in the garlic and the ginger. Cook for 30 seconds, or until fragrant. Add in the peas, and then add in the cooked rice. Stir to mix through.

4. Add in the soy sauce and the sesame oil. Toss to coat. Lastly add in the bacon, chopped egg and spring onion. Stir, and take off heat to serve. Serve immediately.
