I don’t know about you, but I love anything that’s combined in one dish and baked in the oven. It means less things to screw up {yep, I screw up all the time!} and less things to prepare. Make it ahead, bake it later. Call it dinner.
Creamy Chicken Pasta Bake
Ingredients
250g dried penne pasta
Leftover chicken {half a BBQ chicken would be perfect}
100g baby spinach leaves
300ml light thickened cream
3/4 cup semi-dried tomatoes
1 cup tasty cheese, grated
1 1/2 cup parmesan cheese, grated
Method
♥ Preheat your oven to 200°C. Lightly grease a baking dish.
♥ Cook the pasta according to the packet instructions, or until tender.
♥ While the pasta is cooking, remove the chicken meat from the chicken. Thinly shred the meat and set it aside.
♥ Drain the pasta and return it to the saucepan. Add in the chicken, spinach, cream, tomatoes and 1 cup of the Parmesan. Stir to combine. Spoon the mixture into the baking dish.
♥ Top with the remaining cheeses, and bake in the oven for 20-25 minutes or until golden. Serve hot.

I tried this for dinner this evening. It was so easy and so good, except I used sun dried tomatoes, which I didn’t like so next time I will leave the tomato out. Otherwise a great quick easy meal to make.
