125g butter
2 ripe bananas
1 tsp vanilla extract
1/2 tsp ground cinnamon
2 tablespoons milk
2 free-range eggs
180g caster sugar
230g self-raising flour
Instructions
- Preheat your oven to 170ºC, and line a loaf tin with baking paper.
- Place the butter into the Thermomix and melt by cooking on Speed 1 at 100 degrees for 2 minutes.
- Add in the banana and process on Speed 5 for 8 seconds.
- Add in the vanilla, cinnamon, milk and sugar. Process on Speed 5 for 10 seconds.
- Add in the eggs and process on Speed 5 for 5 seconds.
- Scrape down the sides of the bowl, and add the flour. Process on Speed 5 for 10 seconds, or until all combined. Don’t overmix or you won’t have a nice light banana bread.
- Pour into the prepared tin and cook for 1 hour, or until a skewer comes out clean when poked into the middle.
If you love a chocolate banana bread (like I do) add some choc bits into the middle of the mix, by pouring in half of the batter, adding the chocolate and then topping with the remainder of the batter.
