Barbecued Chicken and Avocado Quesadilla

Quesadillas are one of my favourite meals. That cheesy goodness! Yum. I love adding capsicum and coriander, but you can try the recipe below and mix it up as you please. Happy cheesy good time.


Barbecued chicken and avocado quesadilla

Ingredients

2 chicken breasts
1 red onion, finely sliced
1 garlic clove, finely sliced 1 avocado, cut into long, thin slices
100 g cheddar cheese
100 g provolone cheese
8 flour tortillas
4 tablespoons barbecue rub {this recipe is easy, otherwise we generally make a mix from what we have in cupboard}

Method

  1. Rub the chicken with combined spices until coated evenly and leave to stand for 30 minutes.
  2. Lightly fry the onion and garlic on a oiled barbecue flatplate until golden. Remove and set aside until needed.
  3. Add the lightly oiled chicken fillet and grill for 4–5 minutes per side (depending on thickness of the fillets), or until cooked through.
  4. Remove the chicken from the barbecue, place on a cutting board and cut into 1 cm slices.
  5. Place the chicken, avocado, onion, garlic and cheeses onto the flour tortillas. Cover with a tortilla.
  6. Place on the barbecue flat-plate until lightly toasted on both sides and the cheese is melted. Cut and serve warm.

  1. This is one of my most favorite meals and so quick and easy on a weeknight if I’ve grilled the weekend before. We’re planning to have barbecue chicken quesadillas this week. Also good, grilled shrimp quesadillas! I have a great Bobby Flay recipe for shrimp quesadillas with habanero-garlic vinaigrette.
