Baked Chicken Quesadillas Recipe

There are recipes that I make often, and then forget to share here, and that feels like a bit of a crime, especially with this one. These are so easy to make and the chicken filling is SO SIMPLE and so delicious. Like, grab a spoon and dig in. It’s so good.

Of course, add to them what you wish. We keep it simple with lettuce, tomato and avocado {with some coriander} and salsa too. You could add red onion, cucumber, carrot… whatever veggies you like.

Baked Chicken Quesadillas Recipe


4 large flour tortillas
3 cups shredded chicken {I break up a whole BBQ chicken and use all of that, otherwise 3 cups is perfect}
300ml sour cream
1 cups grated mozzarella
2 spring onions, chopped finely


1. Preheat to 180C and line a tray with baking paper.
2. Place all ingredients into a bowl and stir to combine. Divide mixture evenly between the four tortillas, and cover half of the tortilla, and fold over into half.
3. Place onto prepared baking tray and bake for 20 minutes, or until golden. Cut into halves and serve with salad of your choice. Enjoy!
