You arrive at a party, and smack bang on the table is a cheesy cob dip. Can you resist? Do you even want to? The answer is no, and no. OF COURSE YOU DON’T RESIST. You dig in. Cob loaf dips are THE best. Let’s be real.
I made these so many times a year, and I realised I’ve never shared a recipe here. So here we are. Bacon and cheese cob loaf dip.
It’s super cheesy and so delicious. It’s easy to make. And gosh darn, just make it. And invite me over, cos I can’t resist. SO GOOD.
Bacon and cheese cob loaf dip recipe

Ingredients
2 spring onions, sliced
4 rashers of bacon, diced
275g pack of Cream Cheese, at room temperature
2/3 cup of sour cream
2/3 cup of thickened cream
1 cup of grated cheddar Cheese
1 cup of grated mozzarella Cheese
1 cob loaf
Instructions
1. Line a large tray with baking paper and preheat your oven to 180ºC.
2. In a frying pan over medium heat, cook the bacon and spring onions for a few minutes, until browned. Set aside while you prepare the rest of the ingredients.
3. Cut a circle into the top of your cob loaf, and remove the top {like a lid}. Scoop out the soft bread from inside, and tear into chunks. Place onto the tray and bake for 10 minutes.
4. Place the cream cheese, cream, sour cream and cheeses into a microwave safe bowl, and cook for 1 minute. Stir, and cook for another minute. This just gets it nice and melty, ready to go inside the cob loaf. Stir in the bacon and spring onions.
5. Remove the cob loaf from the oven and pour the cheesy mixture into the cob loaf shell. Place back into the oven for 30 minutes. Serve immediately.
