Ingredients
3 rashers of bacon, chopped into thirds and rind removed
1 sheet of Woolworths puff pastry
1 heaped tablespoon of Woolworths tomato paste
4 free range eggs
A handful of rocket, to serve
Instructions
1. Preheat oven to 180ºC. Line a tray with baking paper. Place bacon onto the baking tray, and bake for 12 minuntes or until crispy.
2. On another baking tray, line with baking paper. Place the pastry sheet onto the tray, and with a sharp knife score a square around 1cm from the edge of the pastry, to create a crust. Prick the middle of the pastry with a fork a few times to stop it from puffing up. Place into the oven to cook for 10 minutes.
3. Remove the pastry from the oven and brush with tomato paste. Crack the four eggs on top, and place into the oven and cook for a further 10 minutes.
4. Slice into four serves, and top with bacon and rocket to serve.
Note: Alternatively, to make it a little more fun, you can cut the pastry sheet into four squares and make individual tarts.
