Slow cooker bolognese

Ingredients

  • 1 kg minced beef and pork mix

  • 2 cloves garlic, peeled and chopped

  • 2 carrots, peeled and chopped

  • 2 celery sticks, chopped

  • 2 small onions, peeled and chopped

  • 2 cups tomato passata

  • 2 teaspoons tomato paste

  • 1 large bag spinach

  • 1 teaspoon dried oregano


Instructions

  1. Prepare vegetables by chopping or blitzing.
  2. Optional: brown vegetables and minced meat for extra flavour.
  3. Add all ingredients except spinach to the slow cooker.
  4. Cook on low for 8 hours.
  5. Add spinach during the final 30 minutes of cooking.
  6. Serve with pasta, and a sprinkling of cheese.

Notes

For a smoother sauce, blend half of the cooked bolognese and stir it back through.

Fresh herbs can be used instead of dried if available.

This recipe freezes well for up to 3 months.
