Hello! I am going to get to this delicious Crispy Nutella Weetbix Slice recipe, but first let me check in with you. How are you? I’m currently snuggled up on the lounge with Lulu, listening to the rain outside. Last week the kids were swimming in the pool, and now it’s like winter has returned and I quite like it. We needed rain so badly, and I’m so happy that we’re getting a lot of it.
How was your long weekend? We’ve done a lot of together time. My sister and her husband are taking an adult gap year, traveling around the world for a whole year {they call themselves flashpackers, cos they like fancy but I’m sure they’ll be reigning that in over the year!}, so we’ve been jamming in as much quality time together before they leave. I’m dreaming of meeting them somewhere along their trip, but just trying to figure out where, when and how.
Now to this slice. Come to mama! This tastes like comfort to me, because it’s a twist on a classic slice that my mum used to make for us as kids. Every cake and bake stall, this one would come out and it was delicious. Don’t be scared by the Weetbix… it works, and it works well. {If you’re not from Australia and don’t have Weetbix, this is what it is… so you can find something similar where you are}.
I drizzled this one with white chocolate, but you could add an icing, or leave it plain. It really is a versatile slice that is easy to mix up a little. Best of all, it’s got that nice, satisfying crunch to it. Perfect with a cup of tea on a day like today… if only I had some left!
