Ingredients
FOR THE DRESSING
1 tablespoon sesame oil
1 tablespoon vegetable oil
1 tablespoon soy sauce
2 tablespoons sweet chilli sauce
1/3 cup peanut butter
2 tablespoons lime juice
FOR THE SALAD
1½ cups snow peas, chopped
2 cups bean sprouts {rinsed}
1 red capsicum {deseeded and cut into small strips}
2 spring onions {finely sliced}
1 packet hokkien noodles
1/4 cup sesame seeds
1/4 cup chopped coriander
Instructions
1. Prepare the Hokkien Noodles as per the packet instructions {generally soak in boiled water for a few minutes until softened}.
2. Place all of the dressing ingredients into a jug and whisk together.
3. Put the snow peas, bean sprouts, capsicum, spring onions and the drained noodles into a bowl. Pour the dressing over them and mix to coat everything well.
4. Sprinkle with the sesame seeds and chopped coriander, and serve. Or pack up to eat for lunch and dinners during the week.
