1 and 1/2 cups wholemeal plain flour
1/2 cup plain flour
1 teaspoon baking powder
2 teaspoons baking soda
3/4 cup brown sugar
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1/2 cup vegetable oil (coconut oil works well too!)
1 large apple, grated
3/4 cup apple puree
1 1/2 cups grated carrot
1/2 cup walnuts, roughly chopped
1/2 cup sultanas
1/2 cup toasted flaked coconut
Instructions
- Preheat oven to 160ºC, and if you’re not using a silicon muffin tray, then line a muffin tray with 12 baking papers.
- In a large bowl combine all of the ingredients, and stir until just combined. Spoon into the muffin tray {this recipe makes 12 muffins} and then bake for 20-25 minutes, until cooked through.
- Serve warm, or freeze and reheat for on-the-go breakfasts, or snacks.
