Date & Walnut Loaf Recipe

Description

Put the kettle on and get ready to cosy up with a slice of this delicious date and walnut loaf with lashing of butter.


Ingredients

Scale

1 cup fresh dates, pitted and chopped roughtly

1/4 cup olive oil {extra virgin}

1 tsp bicarbonate of soda

1 cup boiling water

1 cup caster sugar

1 egg

100g walnuts, chopped roughly

1 1/2 cups self-raising flour


Instructions

  1. Preheat the oven to 180ºc. Line a loaf pan with baking paper.
  2. In a heatproof jug, place the dates, bicarb soda, water and oil. Let stand for 10 minutes.
  3. In a large bowl, whisk the egg and sugar. Stir in the flour and walnuts. Add the date mix, and stir until just combined.
  4. Pour the mixture into the loaf tin and bake for 45 minutes. Serve warm with butter.

 


Notes

If you want a lighter loaf, you can leave the date mix in the boiling water longer to break them down more. I like a little bit of chew so 10 minutes is perfect for me!
