Description
Put the kettle on and get ready to cosy up with a slice of this delicious date and walnut loaf with lashing of butter.
Ingredients

1 cup fresh dates, pitted and chopped roughtly
1/4 cup olive oil {extra virgin}
1 tsp bicarbonate of soda
1 cup boiling water
1 cup caster sugar
1 egg
100g walnuts, chopped roughly
1 1/2 cups self-raising flour
Instructions
- Preheat the oven to 180ºc. Line a loaf pan with baking paper.
- In a heatproof jug, place the dates, bicarb soda, water and oil. Let stand for 10 minutes.
- In a large bowl, whisk the egg and sugar. Stir in the flour and walnuts. Add the date mix, and stir until just combined.
- Pour the mixture into the loaf tin and bake for 45 minutes. Serve warm with butter.
Notes
If you want a lighter loaf, you can leave the date mix in the boiling water longer to break them down more. I like a little bit of chew so 10 minutes is perfect for me!
