Baked Asian Chicken Meatballs

Ingredients

MEATBALLS

500g chicken mince

3 teaspoon sesame seeds

3/4 cup breadcrumbs

Salt and pepper

1 teaspoon sesame oil

4 garlic cloves, crushed

SAUCE

3/4 cup soy sauce

3/4 cup mirin

1  teaspoon sesame oil

1/3 cup of honey

3  tablespoon rice wine vinegar

Sesame seeds, to garnish

Coriander, to serve

Bok choy, steamed, to serve


Instructions

  1. Line a baking tray with baking paper. Preheat oven to 220ºC.
  2.  In a large bowl combine all of the meatball ingredients. Use your hands to combine, and then roll into small meatballs (around 1 tablespoon in size).
  3. Place the meatballs onto the prepared tray, and place into the oven to bake for 5 minutes.
  4. Meanwhile, in a small jug place the soy sauce, mirin, sesame oil, honey and rice wine vinegar. Stir to combine. Remove the meatballs from the oven, and drizzle over meatballs to coat.
  5. Place the tray back into the oven and cook for 10 minutes, or until cooked through.
  6. To serve, sprinkle with sesame seeds and serve with bok choy and coriander. You could also serve with rice, if that suited you!
