Thermomix Tutti-Fruity Muffins

“I’MMMMM STARRRRVVVING!” If you’ve got kids, or been around kids, or ever been a kid you’ve probably heard that a million times. Or at least once. I think kids often get starving and remotely peckish mixed up. Nevertheless there’s a lot of consumption of food going on in our household these holidays.

I’ve been making these muffins for a very long time. Since 1999 to be exact {that was when you couldn’t be on the phone and the internet at the same time, remember that?}.

They’re filled with dried fruit, which you puree a little so that little people don’t turn their noise up at it. Use any dried fruit you like. I like apples, sultanas and apricots, but I think dates would be amazing. Do whatever you please.

I did these in the Thermomix, but I’ve been also making this so long {waaaay before Thermomixes were even a thing} so you can totally do it without. See below for ‘normal’ instructions too.

Thermomix Tutti-Fruity Muffins


Ingredients

Scale
  • 130g {1 cup} white plain flour
  • 130g {1 cup} wholemeal plain flour
  • 3 teaspoons baking powder
  • 2 tablespoons raw sugar
  • 230g {1 cup} milk
  • 1 egg
  • 125g butter, melted
  • 150g {1 cup} dried fruit

Instructions

  1. Preheat your oven to 200°C.
  2. Prepare your cupcake tin by lining with cupcake papers {around 12}.
  3. Place milk and fruit into Thermomix. Blend on Speed 8, for 10 seconds. You want them to be chopped thoroughly.
  4. Add the egg and butter. Blend on Speed 6, for 5 seconds.
  5. Add dry ingredients and pulse blend until just combined.
  6. Fill the cupcake liners until 3/4 full. Bake for 20-25 minutes, or until golden and cooked through.

Notes

  • If you’re not using a Thermomix, just chop the dried fruit roughly and blend with the butter, milk and egg. Place in a bowl, and mix with the dry ingredients and bake as above.
