Thermomix Butter Cake Recipe With Butter Glaze

Ingredients

250g butter, at room temperature
440g {2 cups} sugar
4 free-range eggs
1 tablespoon of vanilla extract
390g plain flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon bicarb soda
260g {1 cup} buttermilk

GLAZE:
85g butter
165g {3/4 cup} white sugar
2 tablespoons water
2 teaspoons vanilla extract

Method

1. Preheat your fan-forced oven to 180ºC. Grease a bundt tin with butter. Set aside.
2. Place all of the cake ingredients into your Thermomix bowl, with the butterfly attachment and mix on speed 4 for 30 seconds. Scrape down sides. Mix for a further 2 minutes on speed 8.
3. Pour the mix into the tin and bake for 1 hour, or until a skewer poked into the middle comes out clean.
4. Once the cake is cooked, quickly make the delicious butter glaze. Place all of the glaze ingredients in a saucepan and cook over medium heat until completely melted. Make sure the mix doesn’t boil.
5. Poke holes all over the cake while still warm, and pour the glaze over slowly.
