Is there anything more soothing than chicken noodle soup? It feels like it fixes everything, with its wholesome broth and comforting flavours. Are you with me? With winter almost upon us, and Easter just around the corner… I think this is the perfect meal. Pop it on the table for Easter lunch with some crusty bread rolls, and it makes the perfect lunch after a little too much chocolate for breakfast, because surely I can’t be the only one to indulge in a bunny or two for brekky on Easter morning, can I?

Best of all, this takes around 30 minutes to make. You can use up leftover chicken from the night before {I’m going to be sharing the best way to slow cook a whole chicken on my blog soon, stay tuned}. If I’m roasting a whole chicken, I love to pop two in the oven so that I can use the other for lunches, sandwiches, or soup, just like this recipe.

I’m a big fan of quick dinners, because it means more time for family and having fun. Almost 50% of families wish they could spend more time together, so quick cooking leaves more time for being together, and that’s always a good thing.

Quick Chicken Noodle Soup Recipe

INGREDIENTS

1 tablespoon olive oil
1 brown onion, diced
2 carrots, peeled and sliced into rounds
2 celery stalked, diced
2 garlic cloves, chopped
2L quality chicken stock
1 teaspoon dried oregano
1 bay leaf
3 sprigs of fresh thyme
250g fresh egg pasta
2 cups cooked Steggles chicken, shredded

METHOD
♥ In a large saucepan, heat oil over medium heat. Add the onion, carrots and celery. Cook for 5 minutes, or until the vegetables have softened.
♥ Add the garlic, and cook for another minute.
♥ Add the chicken stock, oregano, bay leaf and thyme, and bring to the boil. Add the pasta, and cook for 10 minutes.
♥ Add the shredded chicken, and cook for five minutes. Remove the thyme sprigs and bay leaf, and then serve.

Melt some white chocolate in the microwave and then colour with gel colouring {liquid colouring won’t work, FYI}. Dip the chocolates in, then pop into the fridge to set. Drizzle with a little extra chocolate, to create a little bit of a fancy look.

For the Easter egg place cards, simply grab some polymer clay from your local craft or bargain store. Design it however you like. It’s a great activity for the kids to do. Once you’ve finished your creation, pop it in the oven to bake {as per the instructions on the packet}.

For the little nests, I just made choc-chip cookies {a packet mix is fine}, and rolled it into tablespoon heaped balls, and popped each into a mini-muffin tin hole, cooking until golden. Once you take them out of the oven, use the stick of a wooden spoon to create a hole. Once cool, fill with icing and top with speckled Easter eggs.
