No-bake Tim Tam Rocky Road Slice

I’ve always worked alone. Well, with people, but I’ve never been in one of those environments where everyone sits around the lunchroom chatting, or meeting for drinks on a Friday night. I started working as a nanny, then worked online {from home} so while I had people around me, it was never in an office space.

So, I always wondered what it would be like. I’ve heard horror stories, but I’ve also heard really good things. Like, mum’s work… sometimes someone will bring in a cake or slice and happy days. They share, they chat, they eat. I think I’d like that side of it! One of my mum’s workmates brought in a Tim Tam Rocky Road and I knew I liked it as soon as I heard it. Of course I asked for the recipe. I’ve tweaked it a little bit, because the original recipe involved Turkish Delight {ain’t no one got time for that!} and pistachios {I wanted to make sure the kids would still enjoy it}, so I just swapped them out or in the case of the nuts, left them out.

I know a good handful of you guys don’t have access to Tim Tams. Shock horror. If you can’t get your hands on Tim Tams, just use your favourite biscuit/cookies and see how you go.

No-bake Tim Tam Rocky Road Slice

Ingredients

500g chocolate
3/4 cup shredded coconut
165g packet Tim Tams {I used the plain ones but go crazy and try a different flavour!}
200g marshmallows, halved
60g red frogs {or snakes or other lollies}, chopped

Method

♥ Line a 18cm x 28cm baking tray with baking paper.
♥ Melt the chocolate. I did it in the microwave {40 seconds, and then in 25 second bursts until completely melted}. You can do it in a heatproof bowl over simmering water, if you find that easier.
♥ Place the coconut in a frying pan over a low heat. Stir for about 3 minutes or until golden brown.
♥ Roughly chop the Tim Tams and then combine it with the melted chocolate and the coconut. Add in the marshmallows and red frogs.
♥ Place into the fridge and set for two hours. Cut into slices and eat.

  1. Oooo! I’m the first to comment 🙂 Usually I’m so late there are hundreds of posts 😉 This looks amazing. I think I’ll try it. I’m not much for making sweets as we are trying *trying* to be sugar free or at least limit our sugar intake.. might spring this out after we’ve been good for a little while. It looks so yummy! (and while I’ve been typing someone else has commented!)

  3. Hi Chantelle, so happy to have discovered your blog. It’s full of Aussie sunshine! I’m in the UK and planning to move to Australia in the next 12 months – and really hoping it will be coastal NSW if my husband gets the job he wants! The benefits of working from home far outweigh what you miss from office life, in my view. I spent a total of 15 years in offices as a journalist, and I just love the fact I work freelance from home now and get to work in my pyjamas (well not for those video calls obviously!). Never tried Tim Tams. Am I missing out!?

  4. Love it! I often make it with cranberries instead of red frogs and almonds/macadamia instead of tim tams. I’m lucky to work near a market where I can buy them cheap! So easy to make for work afternoon teas when you get home late the night before.

Chantelle you kill me with these easy to make recipes – and as it happens all the packets are just that little too big so I have to eat a bit of each while making it… a few marshmallows, a few tim tams, a few lollies and pieces of chocolate.
