Hello. I’ve made cake. Want to come in, and I’ll put the kettle on and we’ll have a slice of cake together. Not just any cake though, Moist {ugh I hate that word!} Thermomix Banana Cake. Green tea for you?

I might talk your ear off for a moment. Do you know it’s the Year of the Monkey? It is. I was excited because I was born in the year of the monkey, so I thought it would be my year. You know? I’d be lucky and stuff. So I started reading up on it, and it’s not quite the case. I’m going to struggle this year, apparently.

I’ve already struggled a bit. You might not have noticed here, but I have. I’ve had some gallstones stuff going on, and then during another blood test some other things came up… and my doctor mentioned the ‘C’ word. I freaked. I spent a weekend crying. Hubby worked, and I would find little child-free spots in the house to lose my shit without them seeing. And then I’d turn around and the kids would be there, and asking, “Why you crying Mum?”

So much went through my head. It was a big reality check for what’s important in life, and what doesn’t matter at all. It was the longest two weeks of my life, and thankfully after seeing a specialist… I’m fine. I just need an iron infusion and I’ll start feeling better. This year I’ve been making my health a priority, and this is just going to continue. I am grateful for my health, for my life and for all that I have.

It’s done in the Thermomix, which means there are no lumpy, bumpy banana bits. That’s a good thing. It’s moist and light, and the addition of the cream cheese frosting takes it to a whole other level. I found this recipe over on the community website.

THERMOMIX BANANA CAKE RECIPE

Ingredients
3 ripe bananas, peeled
1 tsp vanilla extract
150g caster sugar
150g butter, room temperature
2 eggs
240g self-raising flour {I used wholemeal}
1/2 tsp bicarbonate of soda
30g milk

Method
♥ Preheat oven to 160ºC. Line a round cake tin with baking paper.
♥ Place bananas and vanilla extract into the Thermomix bowl, and mix for 5 seconds on Speed 4. Set aside.
♥ Without cleaning the bowl, add the butter an sugar and mix for 10 seconds on Speed 5.
♥ Add the eggs, and combine on Speed 5 for 10 seconds.
♥ Add the banana mixture and mix for 5 Seconds on Speed 5.
♥ Add the flour, bicarb soda and milk. Combine for 15 seconds on Speed 4.
♥ Pour the mixture into the prepared tins, and bake for one hour. If the mixture still looks wet, you can lower the temperature to 140ºC and cook until cooked through. Mine only needed an hour though.

I use this recipe for my cream cheese frosting.

  1. Good morning, thank you for the delicious cake. I’m sorry that the year of the monkey is not so awesome. I’m glad your specialist ruled out the c word. I’m hoping you are feeling better soon.
    Me. I’m trying to get ahead moneywise, instead of just getting by, so I’ve signed up as a body shop at home consultant in addition to my 2 other jobs.
    My mother in law has a brain tumour and we are slowly watching her deteiriate. It’s awful.
    But we are alive and breathing hopefully having a little 2 night holiday soon. Can i have some more cake please xxx

  2. Hi FMS – omg I just love banana cake – looking at it with heart eyes – cake for breakfast (I’m the only one in our family who actually likes banana so yay me – I don’t have to share!!! And cream cheese frosting is like heaven) (sigh) ❣
    Damn that monkey!!!! And damn that “c” word – Hope you went out and used that other “c” word after seeing the specialist – yes “CELEBRATE”
    This year I’ve decided to say yes to more things – and make more memories as a family – I’m still trying to get my head around that it’s March!!!! When did that happen???? ? Please I need a do over for at least February

    • Hello! I thought the kids didn’t like banana cake, and when I was making it they confirmed it, “WE HATE BANANA CAKE!”

      And then it was cooked, and they wanted some and now it’s, “BANANA CAKE MY FAVOURITE!”

  3. Hi Chantelle, sorry to hear that your year is bringing you bad luck. Seems, 2016, the year of the monkey is bad for everyone across the world.
    Do you still have gall stone issues. I have had the same pains as what you described in one of your posts and my thoughts were, oh my goodness someone out there knows what this pain is like. Anyway, I have never had a gastroscopy like I was supposed to and have been on ulcer meds for years. Assuming its an ulcer. Long story short, I did a milk kefir and flaxseed cleanse last year. I am not one to believe everything I read online, but I was desperate. Since doing the cleanse, I can eat chocolate again (dam) and ice cream, biscuits and flour products etc without getting bad reflux and those terrible pains in my solar plexus. I stopped my chronic ulcer meds in December and have not taken a single antacid since.
    Not sure if you get Kefir in Australia, but if you Google it there are more benefits than bad reviews.

      I have the gallstones still, but since changing a few things I’ve had no pain. They’re just hanging out inside me, behaving!

      • Glad to hear your changes have helped the pain. I don’t know if mine was/is gall stone related or ulcer, but certain foods like chocolate, ice cream and fatty foods were a trigger.

  4. OH MY GOD! SO happy to hear that you don’t have the ‘c’ word. That was a stressful paragraph. Boo about the iron infusion though. If it makes you feel any better we have worms and I have just done 7 loads of washing. (By we I mean my kids – I hope…)

  6. Thanks for the recipe. I saw the pic a few days back and had noted it for my “try it out” list. Today after school/work, instead of running kids around to activities we cancelled everything (kids were pooped after school athletic sports) Yeeha, night off for mums taxi!! It was my turn for my fave activity – cooking ?Made the cake – we all loved it. Great thermi recipe. Quick, easy and very tasty.
