Lunchbox Treat: Thermomix Chocolate Sugar Cookies Recipe

My kids love Tiny Teddies, and back when they were around I loved Scalliwags {remember them? Arnotts, bring ’em back please!}. I’ve been trying to find a recipe that I could make myself, to kinda replace the old Tiny Teddies, and to give that same delicious taste of the Scalliwags of my childhood. These Thermomix Chocolate Sugar Cookies are quite a delicious replacement, and pretty easy to make too.

It goes without saying that they’re a treat, not organic, not raw, not sugar-free and definitely not green.

THERMOMIX CHOCOLATE SUGAR COOKIES RECIPE

INGREDIENTS
125g cold butter, cut into cubes
1 tablespoon vegetable oil
100g sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 egg {free range or organic}
20g cornflour
40g cocoa powder
190g plain flour

METHOD
♥ Preheat the oven to 180ºC. Line a cookie tray with baking paper.
♥ Cream the butter, oil, sugar, vanilla and salt in the bowl on SPEED 7 for 30 seconds. Scrape down side of the bowl.
♥ Add egg and mix on SPEED 4 for 10 seconds.
♥ Add the cornflour, cocoa powder and flour. Pulse in 3 second bursts on speed 5.
♥ Roll the dough until 1cm thick. I do this between two pieces of baking paper, which makes it super easy.
♥ Cut into shapes. I do little circles {diameter of 3cm} to make for cute lunchbox treats. Depending on the size of the cookie you will need to cook for between 8 and 12 minutes. You’ll want them to be firm around the edges, but still soft in the middle.

  1. I made these tonight. They are quite tasty! Thanks!! I love getting your cookie recipes and trying new things. And, one day I’ll have the grams to cups down without having to look the up, LOL! (I’m in the USA….)
