Fruity Breakfast Bars {A Thermomix Recipe}

Ingredients

  • 50 ml coconut oil, plus extra for greasing
  • 70 g brown rice
  • 1 tbsp linseeds (flaxseeds)
  • 1 tbsp chia seeds
  • 140 g Pink Lady apple (approx. 1 apple), core and seeds removed
  • 200 g mixed dried fruit (e.g. dates, apricots, cranberries, sultanas, goji berries)
  • 90 g rolled oats
  • 50 g puffed brown rice
  • 20 g desiccated coconut
  • 70 g raw sugar
  • 2 tbsp pepitas
  • 2 eggs
  • 50 ml honey

Method

  1. Line baking dish or tray with greaseproof paper.
  2. Combine rice bubbles and desiccated coconut into a mixing bowl
  3. Place dates in TM and chop on speed 6 for 5 seconds. Add coconut oil, honey and cacao powder and cook for 5 mins, 100 degrees, speed 2
  4. Once finished cooking, the mixture should be at a thick pouring consistency. Pour the mixture into the rice bubble/puffed rice mix and mix together until all the rice bubbles are well coated
  5. Place the mixture into the baking dish/tray and press down until mixture is even and compact. Refrigerate for at least half an hour until set then cut into slices.

  1. Looks delicious, but is that the wrong method? Although I like the sound of that method too… have you posted that recipe in the past?
