Four Ingredient Christmas Cake Recipe

I never bothered making fruit cake, because from memory I’d only heard about all the work it entailed, and the weeks in advance it needed to be made. I threw it in the ‘too hard basket’. It was too hard… but I do love fruit cake. With custard. It’s Christmas. My neighbour Carol, makes this four ingredient {yes FOUR} Christmas cake each year and I love it. It does it’s magic overnight, and then you cook it and then you’ve got CAKE. Christmas cake.

Four Ingredient Christmas Cake Recipe

FOUR INGREDIENT CHRISTMAS CAKE RECIPE

INGREDIENTS

1 kg of mixed dried fruit {Carol likes the Big Sister brand}
2 cups of pure orange juice
2 cups of self-raising flour
1/2 cup of nuts {walnuts and almonds work well}

METHOD
♥ Place the mixed fruit and orange juice in a bowl and mix well. Leave to soak overnight.
♥ Once the mixture has soaked overnight, add in the flour and nuts and mix to combine. Preheat your oven to 180ºC, and line cake tin with baking paper. Pour in mixture and cook for 1.5 hours, checking regularly after the hour mark to see if it’s cooked through {it will be cooked when firm to the touch}.

Four Ingredient Christmas Cake Recipe

Serve with custard or top with cream cheese frosting, whichever you prefer.

  1. I’ve made a similar recipe before – you can use a nut chocolate instead of the nuts if you like. I’ve made it in muffin tins for individual little puddings – lovely! Thanks so much for reminding me of this!
