The weather has been super chilly lately, even on the tropical coast where I am. It’s been beanies and scarves all the way. We’re lucky that we still get beautiful sunny periods, but with school holidays upon us I need to have some indoor activities up my sleeves, so that we can have quality family time together, and also to keep the kids busy {they love being BUSY!}.

As you may already know, I’ve been working with Steggles for almost a year now, to help encourage quality family time together. My kids are CRAZY about playdough. It’s their favourite thing. This snow dough is a fun twist on the traditional dough. You can put the cornflour in the freezer before making this recipe to make it cold, for a more authentic snow dough.

One of the perks of this snow dough, which I loved, is that our hands were super smooth after because of the moisturiser. You can build and play with it like normal dough, it just has a smoother feel to it. The girls said that it felt more like slime {but it’s not wet or as messy!}.

SNOW DOUGH RECIPE

INGREDIENTS

500g cornflour
500ml body moisturiser
1 tube of silver glitter

METHOD
Place everything into a bowl and mix together. Play around with the consistency. If it”s too wet, add more cornflour.

DIY Snow Dough Recipe

Another thing I love about a good dough recipe, is that it keeps the kids busy for hours and I can sneak off and do things I need to do; check Facebook, shower, laundry, sit and breathe, or cook dinner. I’ve been making a whole lot of tray bake dinners of late. It’s so easy. I just toss everything on a tray, pop it in the oven and let it cook. It’s not messy, is delicious and healthy too.

I add the rocket, because I love rocket with everything and I think the freshness works beautifully. You could even do a little shaved Parmesan if you were that way inclined.

Garlic Chicken and Vegetable Bake

INGREDIENTS

8 skinless Steggles chicken thighs
2 tbs olive oil
300g baby potatoes, chopped into halves
800g medium vine tomatoes, halved
2 zucchini, thickly sliced
1 punnet of cherry tomatoes
1 red onion, peeled and chopped roughly
4 garlic cloves, peeled and finely chopped
4 rosemary sprigs, leaves removed and chopped
1 tsp dried red chilli flakes
Finely grated zest and juice of 1 lemon
Salt and pepper
200g baby rocket

METHOD
1. Preheat oven to 180°C. Heat a large frying pan, and add olive oil. cook chicken for 2-3 minutes on each side. Set aside.Spray a large frying pan with low calorie cooking spray and place over a high heat.
2. Place baby potatoes on a large dinner plate, and cook on high in the microwave for 5 minutes.
3. Line a large baking tray with baking paper, and place the chicken thighs, potatoes, tomatoes, zucchini, and onion onto the tray in a single layer.
4. Scatter the chopped garlic, rosemary, chilli, lemon zest and lemon juice over the top. Season with salt and pepper.
5. Cook for one hour, until the chicken is cooked through. Place baby rocket on top of cooked chicken and vegetables. Place on table and let everyone help themselves.
