If I could have any wish in the world come true this week, I think it would be for more time. I think money complicates things, so I wouldn’t wish for that {I’ve lived with some pretty wealthy people as a nanny and I don’t think it always equates to happiness, although it does relieve some stresses}. Time seems to be the one thing that we’re all short of, and money can’t seem to buy. I wish there were more hours in the day, more time for play, more minutes with family, and more time for sleep.

So, time it is. Next week I might wish for an endless supply of chocolate, or a six-pack, but who knows!

I know I’m not alone. It seems to be something we’re all wishing for. We want more time for togetherness. More time for family. We’re trying to steal moments for togetherness, because this life we live now… it’s busy, and fast-paced and so noisy.

Sure, we could start saying no to more things, and stop filling out plates with responsibilities and the kids could stop wearing so many clothes so we didn’t have to do so much laundry, of course… there’s all that.

I know one of the easiest way to steal back time is to be organised, and to take the thinking out of life. For me, pulling out the slow cooker makes me feel like I’m winning at life. Do you get that too? The night I cooked this chicken recipe, Hubby came home from work and was like, “What is that amazing smell?” and it was this dinner. I loved that it was doing it’s own thing, cooking away as the day went on.

Now to the recipe. Once you make a slow cooker whole chicken you probably won’t look back. It’s so easy, and the chicken is so moist. It makes the perfect dinner. I served ours with a simple salad, because that’s how we eat most nights. I make a deconstructed version for the kids, because that’s how they eat best, and you know you just gotta do what you gotta do!

HOW TO COOK A WHOLE CHICKEN IN THE SLOW COOKER

INGREDIENTS

1 x 2kg Steggles whole chicken
2 lemons
2 heads of garlic
Fresh thyme
Salt and pepper

METHOD
♥ Rinse the chicken, including the cavity and pat dry with paper towel.
♥ Cut one of the lemons in half, and chop the bottoms so that it can sit flat on the bottom of the slow cooker. Place on the base of the slow cooker.
♥ Chop a head of garlic into two and place on the bottom of the slow cooker. Place the chicken on top.

How To Cook A Whole Chicken In Your Slow Cooker

♥ Run you finger between the skin and the breast of the chicken. Place some fresh thyme underneath, and some butter if you’re feeling naughty. Slice the remaining lemon into thick slices and place on top of the chicken. Top with some fresh thyme.
♥ Season with loads of salt and pepper. Cook on high for 5 hours.

♥ Once cooked, serve with your favourite vegetables, and enjoy!

  1. 2017 is all about adventures for me and my girls, my husband’s mum is pretty unwell at the moment so he spends a lot of time flying to and from Melbourne to spend quality time with family and we can’t afford to all go that often, so my three daughters and I plan an adventure to ease the separation. It turns out that we love it! We have been to the beach camping (girls only), a 4wd to a rainforest creek for a picnic and swim for the day, visited a dairy farm, all sorts of stuff.
