Chocolate Weetbix Slice Recipe

Everyone loves a good Chocolate Weetbix Slice Recipe, right? I’ve talked about my neighbour Carol a little bit on my blog before. She’s super lovely, very talented and someone I admire and respect a lot. She’s got a zest for life that’s contagious. She can also cook and bake up a storm, everything that comes out of her kitchen is delicious.

I recently asked her if I could share some of her recipes, and she obliged. Growing up in Australia I think most of us might have tried Weetbix slice. It’s one of those recipes that was made in many kitchens. It was definitely made at my house, and we loved it.

For those not in Australia, weetbix is a breakfast biscuit that is super dry and crumbly. It’s plain, but when added with all these other ingredients… it’s pretty much perfection.

Chocolate Weetbix Slice Recipe

CHOCOLATE WEETBIX SLICE

INGREDIENTS
1 cup desiccated coconut
3 Weetbix, crushed
1 cup plain flour
1 teaspoon baking powder
3/4 cup caster sugar
1/4 cup baking cocoa
180g melted butter
1 teaspoon vanilla extract
200g milk chocolate, melted {to decorate}
Chocolate freckles {to decorate}

METHOD
♥ Preheat your oven to 180ºC, and line a slice tin with baking paper.
♥ Combine weetbix, flour, baking powder, sugar and cocoa in a large bowl.
♥ Combine butter, and vanilla, and add to dry ingredients. Mix until well combined.
♥ Press mixture into the slice tin. Bake for 15-20 minutes until firm. Let cool.
♥ Spread the melted chocolate over the slice and decorate with freckles. Allow to set and then set into squares.
