Slow Cooker Curried Sausages

I don’t know about you, but curried sausages is a meal that often used to show up on the table when I was a kid. Even the mere words make me smile, because it reminds me of my childhood and my mum’s delicious cooking. There were four of us kids, and I think this {along with rissoles, love!} was a recipe that mum could make on a budget, and satisfy our tummies well too.

This version is so easy to make, and while my mum used to make a creamy version, I like this alternative too. With it cooking in the slow cooker, the sausages become really plump and juicy, and soak up all the curry – and it’s a flavour bomb!

Over the coming months, I’m going to be bringing you a bunch of handy budget meals that you can pull together from Woolies for under $10. Most of the time I’m going to try and feed four people for around $5. It’s a challenge, but you know me; challenge accepted!

With these recipes, you’ll see that I breakdown the prices so you can see how much it costs to make the recipe. The price breakdown is for the portion. For example 1kg of Woolworths Basmatic Rice is $3.30 but I’ve only used 64c worth, but I know I’ll {and you will too} use the rice in other dishes.

Along the way I’ll also share tips for saving money. Woolworths has great budget-friendly buys that are always available. For this recipe I bought their chipolatas, which are $5.50 for one pack, but when we buy two packs we can grab them for $9 {saving us $2}. I always pop the second pack in the freezer, and bring them out for dinner at another time.

Another great way to save money is to look out for the Woolworths Food Range brand of items. I recently went to the Woolies head office, and it was beautiful to hear the team talk about this range, because there is so much love and thought put into it. There are around 2000 items in this range, and they’ve worked hard to reduce the salt, sugar and make it a better product for Aussie families to buy. Plus, it always seems to be the best prices for us too, which is a win.

Slow Cooker Curried Sausages

Ingredients

1 packet Woolworths beef chipolata sausages, browned
1 medium brown onion, sliced
2 tbs mild curry powder
400g tin of Woolworths chopped tomatoes
1 beef stock cube
1/2 cup water
1 cup of rice, cooked per packet instructions
Vegetables of your choice


Instructions

1. Place the ingredients {except the rice and vegetables} into the slow cooker. Stir to combine. Set on medium, and cook for 6-8 hours.
2. Once you’re ready to serve, prepare the rice and steam the vegies. Alternatively, you can toss the chopped vegetables into the slow cooker for the last hour, and they’ll be ready to go when you’re ready to serve.
3. Serve into individual plates, or serve on one bit plate for everyone to help themselves.
